I have the IMU sensor GY-511 with LSM303DLHC, I tried to connect it, and is seen by i2cdetect but is not recognized at all by Openplotter, can I configure the software to use this?

No. You need minimum a 9 dof. Have a look into the readme of the library
https://github.com/sailoog/RTIMULib2/blob/master/README.md.
If you add a L3GD20H it should work.
