I agree, the best way of implementing this should be adding support for these boards in I2C tabs.
The bad news:
We are focused on reaching the beta stage asap because there is a new Debian release (Stretch) and we would have to publish a new openplotter image. Beta stage means no new features are added until stable stage is reached but does not mean we can not keep working on new features.

The good news
On last update (0.14.5) we have improved the standalone tools creation to make easy to start. You may want to implement this temporally as a tool and when we are ready we could take your code to add PCF8572 and PCF8574A support to the core as supported I2C devices.
