There was an issue with IOS 14 (https://discussions.apple.com/thread/251829006?page=3).
This should be fixed with Linux kernel 5.10 (see https://github.com/potato1992/Iphone_usb_tethering_fix).
You should update your Linux if uname -a is lower than 5.10.
sudo apt update
sudo apt upgrade
I can't test this, because I don't have IOS 14.
Yeah! I'm typing this on the pi. Thanks all, especially e-sailing, for sticking with me. I've learned a heap already. Sudo apt update and upgrade fixed the problem. What's puzzling is that I read about the Linux tethering bug online when troubleshooting this before I posted the question here but ignored it because my phone tethered initially then quit and it's been running ios 14 the whole time.

I have a similar problem. I have:
Pi 400
iPhone 8 running iOS 15.4.1 w/usb-lightning cable bringing cellular internet in
Internet is set for eth01 and as a WiFi access point using onboard Pi WiFi.
The pi drops the connection for the iPhone multiple times a day
I have done updates, and upgrade
Using auto instead of eth01
I do use a pi zero w for PiHole dns on the WiFi network
