I just received my pypilot hat and and this problem. I was able to fix it by updating the relevant cpp file and rebuilding from the command shell on the pi itself. I'm not sure if this is the canonical way to do it, but it worked fine to simply chmod +x the pypilot.build file in ~/pypilot and run it. It then updated the .tcz file and appeared to launch fine with a working lcd on reboot.
I had the same problem with the jlx display bought on ebay some years ago. The problem was the ugfx driver. I changed some hex commands that i copied from the supplied example of the seller and it worked after that.
If i been awnest, i dont see a reason to go with the nokia or jlx displays. They need to be hard wired to the raspberry pi and its a wiring mess with all the button and lcd cables and you cant have wires more than two meter long. The best solution is to buy one of these(

The steps are:
1)Buy the board i mention
2)upload the bin file Sean posted in the thread i mention in the last page
3)with the esp connected to the pc navigate to the hat directory and run 'make upload'. This will copy the necessary files to the esp.
4) look in the config_esp32.py file how to wire the buttons or change to your requirements and the upload again if changed
Everything is ready.
I havent real time tested this but works flawlesly in the bench

I have the same jlx blinking problem.
Can I find somewhere compiled tinypilot package which includes your fix ? Or I need to build whole from scratch ?
If option numbr 2: How should I proceed in order to have your fix included ?
My nokia5110 display needed replacing. After 2 defective screens I finally got one to work, although it sometimes flashes. I need to build a new reliable unit but have read the reports of problems with the jlx 12864. What is the current advice regarding displays?
