The buttons work for the menu, but if you never press the menu button, then they will make steering commands as you suggest.

Just a note that I had a couple of days sailing with Pypilot and a used 4000mk2 wheel drive I purchased, and Sean's controller. Wow it is so much louder than the old Autohelm unit it replaced. I could hold a course by both wind and compass once I got the clutch right. I hope once I have the gains adjusted properly it is quieter because the motor runs less - it is running at least one second out of every two.

By running one second out of every two, does it move one way then just move back again? Which part makes the noise? The motor? It is louder because it runs more often or it actually makes more noise?

You should try reducing the motor min speed so it can move slower. Try increasing the servo period so it won't move as often. Obviously, try reducing the gains to tune it, this can make it run much less.
