Hello, an absolute node red beginner needs your help.
Can someone explain to me how I can display the temperature

 and or Kompass, GPS data from Moitessier HAT in Node-Red?

I would be very grateful...

Have you tried the KIP app? Makes much better dashboards than you can make in node-red imho.

Thanks for the tip, I'll take a look at it.
My real problem is the sensors.
I have no idea how I get the data from SignalK, OpenCPN (moitessier-hat) in Node-Red ...

Just use a signalk input node >

What do you want to do with the data?

only show in the node-red dashboard.
As an example, I have my GPS position in OpenCPN. 

How can I output this information in node-red?

Please find enclosed a NodeRed file wich subscribes and shows some data in the Dashboard. 2 ways is used, via a function node or SK subscribe node. With NR installed as a plugin inport the flow. I'm using the sample file NMEA 2000 file as input which I have described here https://pysselilivet.blogspot.com/2020/07/understandinstall-openplotteropencpnsig.html
