I am running OPv3 64bit and have never added any websocket configuration. It just works.

surprisingly, after hours, I'm getting all the data in. Is this normal? Is the server polling the data or are the Senors pushing the data to the server and can this changed?

No, the delay of hours before data is seen is not normal. Something has been changed. You can change the update frequency when setting up the device in the I2C app which will then sample the data according to what you've set up. This is then presented to Signalk. That is my understanding based on looking at the code but I would welcome correction.
