It's not because I'm having the exact same problem ...... I also had it a month ago too when I first tried it .... Earlier today I was trying to use the UART for a dAISY Hat which is a freaking nightmare with a Pi 3 trying to disable Bluetooth and while I got it to work after hacking numerous files it was affecting my WiFi stability and turning it off randomly so I put the dAISY hat back on a PL2303 USB dongle and figured it would be easier to reinstall from scratch rather than try to restore the 4 of 5 files I hacked .... But now I can't get it to upgrade because it apparently can't resolve the mirrors URL that hold the dependencies. Same problem trying to upgrade Raspbian. I can grab the github files but not the Raspbian dependencies it also needs

This is apparently a problem with Raspbian Jesse and/or the Raspbian repositories ... The following is from the Raspberry Pi Forum dated mid January
"Depending on the age of your Jessie installation, you may have some serious problems upgrading with apt-get. The other thing is that from time to time, the repositories get messed up and you have to wait a day or two for them to get straightened out. Back up your important files first so if "stuff" happens, you won't have lost anything vital to you."
So basically we have to wait until they fix/update the repositories. Essentially it's not a Open Plotter problem, it's a Raspbian/Raspberry Pi Foundation problem
Open Plotter really needs to start using Raspbian Stretch because the end of life for Raspbian Jessie was September 2017 and these problems are only going to get worse as Jessie is essentially not supported anymore.
