Raspberry OS has its own repository, do not install kernels from no one else. Obviously you can do it but not in onboard and production systems.

the kernel 5.10.5 comes from the RaspiOS repository and not from another source.

Of course, from the beta RaspbiOS

this is the raspberry repo: https://github.com/raspberrypi/firmware
there you can see the "master" branch, the development branch, and you can read 5.10.5.
but if you switch the branch to the "stable" branch you will see 5.4
believe me, you may not remember but I am sure you ran "rpi-update" at some point and every time you update your system you update to the beta kernel.
