Using moitessier hat and GPIO

I took some of PaddyB's great SignalK code and put it on an M5StickC, and it works great. I just finished coding a tank level sensor, and was previously able to put together an engine temp sensor. M5Sticks have a multitude of plug-in devices available, including an RS485 converter that also has an on-board 12-5v buck converter (the buck converter specs show that input voltage can go well beyond 12v). Even if you don't use the RS485 interface, the little add-on is only 3 bucks, so it's worth it just for the 12v converter. M5Sticks also have a small 160x80 display, so in the case of the tank level sensor I have a nice color display of tank level on the device while also sending it via WiFi UDP to OpenPlotter.

They are a tiny bit more expensive than just buying a basic ESP32 board, but you get a little more, like an on-board IMU, a display, a little case and a few other things.
