Connect UM380 radio to OP
I woud like to connect my UM 380 VHF my OP installation, so it can receive GPS data.
Right now the setup is: 
Headless OP on RP4 with a rs422 cabel receiving the depth gauge info from a Garmin device via NMEA:
OP is configured to send GPS and depth via wifi to be optionally received on various devices.
My question: Do I need a second rs422 connected directly to the UM380, or can I get away with the one I have receiving from the Garmin and sending to the VHF?

Since you want to only receive from the Garmin depth sounder and transmit to the VHF, you can possibly use the same converter. RS422 is a protocol based on differential signal; if all devices actually use the wire pairs you should be Ok and could just try it out.

But possibly you don't fully use those differential wire pairs. In that case it's more like an RS232 connection. That can work just fine between OP, Garmin and VHF. You do need to make sure that all these device are grounded properly.

Of course, the baudrate of all three devices need to be programmed to match.

Alternatively, you get yourself a separate serial<->USB converter. I myself apply simple/cheap RS232<->USB converters, and make sure all devices are properly grounded. E.g.:

I tried before and could not get any signal recognized by the VHF ( there are also two sets of wires with different colors ) which does not make the process too simple.
However after trying all combinations and not getting any connections I suspected some other issues.
The Baudrate you mentioned is definately something to research for the UM380.

( on Corona-hold as well )
