We are talking about rpi-update (not eeprom update).
You can install the stable eeprom if you need but if you do rpi-update before updating the eeprom you will install the beta.
rpi-update will install the beta kernel and you should do that only if you know what you are doing. It is impossible to debug OpenPlotter/OpenCPN over a beta kernel because you can have unexpected errors everywhere. It is not easy downgrading from a beta kernel, you should start from scratch and never run rpi-update again.
