I'm not sure if this will help, since i have limited knowledge on the topic, but I had a similar experience: any setup that would work on the boat, wouldn't work at home. And being at experimental stage, that was an issue.

My solution (again, probably not the best one) is to setup raspberry in "on board" mode from the Network app.

At home: Any device that needs to access the Rpi (the tablet that i will have in the boat, or computer) connects to Rpi's access point. Then is accessible at 10.10.10.1. To have internet connection, I connect the Rpi to the LAN with cable.

At boat: Exactly the same, but when i need internet connection, i connect my iphone WITH CABLE to a usb, and share internet.

I know this same setup should be achievable without any cable, but i never managed to do it. At least I can confirm that this way works.

I figured it out. I had errors with dnsmasq.
I followed the instructions on this video and it cleared up the problem

have only one dns active in your netmask, or be shure, they dont overlap.
