How do I get Bluetooth Airmar DST 810 transducer data?

Hello, 
I just bought a DST810 Airmar depth speed and temperature transducer. I don't want to buy any screen device, because I'm using old smartphones over wifi to show signal data. I'd love to use the new McArthur HAT to get nmea2000 data from the DST, but while I'll have to wait for it. All my other instruments are old and use nmea 0183.
There is an app from Airmar called CAST that can show the data by Bluetooth on a smartphone, so I guess that it should be possible to get datas from the DST and send them to signalk.
If anyone has ideas where I should start my researchs... 
And I'll tell here how this project is going on.

I just installed the same.
I suppose the date sent in BT are not NMEA, so it might be difficult to have them in signalk

as I have seatalk 1 and sealtalkNG, the DST is connected to seatalkNG, and I have the raymarine converter so I plan to have openplotter connected to STNG and get all data that is:
depth, water temp and speedo
wind speed and direction
