I have good news for you.
Even if those signal k crashes are due to electrical/connection/format issues, a crash it have never to happen. I have reported the case to signal k developers and they identified and fixed the bug. It will be added into the next openplotter major update. If you do not want to wait you should do:
Delete folder: /home/pi/.config/signalk-server-node/node_modules/nmea0183-signalk
Open terminal and type:
and reset
