Noob be Struggling on step 1

This is my first time with a raspberry pi or anything of the sort.  So, go easy on me.  In short, I changed the username and host name when setting the Pi 5 up, not knowing any better.  After attempting to reinstall and start over, failing miserably, I read that you can't install Open Plotter if the names have been changed.  So, here I sit, in a general state of confusion.  Any suggestions?

Maybe start from fresh, following the instructions should clear everything on the card

That sounds fine and dandy, but I haven't had much luck with this.  I have a 2 TB nvme base and a 128gb sd card.  I have reloaded the OS on the SD card, unplugged the NVME base and all seemed to be fine starting from scratch.  But, when plugging the NVME base back in, it resorted to using the old OS that I originally installed, using my name rather than pi.  So, I tried to erase the the SSD, but for some reason, it only sees 1 of the drives.  I'm just assuming I'm doing something wrong here.  I selected that it should boot of the SD card first before looking for the SSD, but doesn't seem to work that way.  Now, I can open a terminal and log into my Pi with either ssh pi@192.168.xx.xx or ssh David@192.168.xx.xx. I can't seem to completely erase the OS labelled "David".  Any other insights would be greatly appreciated.

How did you try to erase it? When you say "it only sees one of the drives what is 'it'"?

My suggestion would be to boot from the SD card if that works, add the SSD drive and use gparted to delete the partitions on that drive before formatting it. You'll probably need to install gparted as I'm not sure it's part of the standard build.
