Headless Desktop Size Issues

I'm moving slowly towards installing my Pi in the boat. As a newcomer to all of this, the Linux side of it has been a challenge at times, but I think I'm getting there.

As I'm going to be running headless for some of the time I have been investingating that. At first, I discovered that OpenCPN wasn't running full screen, even though I'd got the headless screen resolution set in the Pi. I've fixed that by setting the screen size in OpenCPN, however now the desktop background is following the same sizing issues (see images; OpenCPN before I fixed it, and the desktop taking up the same space). 

This is only cosmetic I think so it's not causing any issues, however I thought I'd ask if there is a way to fix it, or if it might be an issue?

Have seen this also.

best way to get rid of it is to attach an monitor dongle.
sometimes it will be solved by logout and login again.

but for me it is gone with the latest os updates or wayland vnc.
