I was thinking to obviously keep all electronics well covered, and just have the screen accessible to the elements.

I have a very similar screen, the touch functionality was never very useful (small screen, with wet fingers on a moving ship). After a few months the 'mouse' pointer started to go haywire. I unplugged the touch cable, hooked up a wireless mouse and never looked back. The mouse gives so much more control that touch is just not worth it.
